Instructions
- Prepare the Baking Dish: Spray a 9 x 13-inch baking dish with cooking spray to prevent sticking.
- Make the Batter: Beat the cream cheese and almond paste together until smooth, about 2-3 minutes.
- Add Eggs: Incorporate 4 eggs into the mixture, scrape down the bowl, then add the remaining 4 eggs and mix well.
- Add Sugar and Vanilla: Stir in the sugar and pure vanilla extract until combined.
- Add Dairy: Gradually add the milk and heavy cream to the batter, mixing thoroughly and scraping down the sides and bottom as needed.
- Layer Bread and Fruit – First Half: Place half of the bread cubes into the prepared baking dish, then add half of the strawberries, blueberries, and raspberries over the bread.
- Layer Bread and Fruit – Second Half: Repeat layering with the remaining bread cubes and remaining strawberries, blueberries, and raspberries.
- Pour Batter: Mix the batter again briefly and gently pour it over the entire layered bread and fruit mixture. Using a ladle helps to pour evenly.
- Refrigerate Overnight: Cover the dish with plastic wrap and refrigerate for at least 8 hours or overnight to allow the bread to soak.
- Preheat Oven and Prepare for Baking: When ready to bake, preheat the oven to 350°F (177°C). Remove the plastic wrap and sprinkle the top with sliced almonds and raw sugar.
- Bake: Bake for 45-55 minutes, depending on your preference for texture. 45 minutes yields a softer, slightly custardy center, while 55 minutes cooks it firmer; around 51 minutes is ideal.
- Serve: Serve warm plain or with pure maple syrup or a delicious waffle sauce for added sweetness and flavor.
