Raspberry Sauce

Instructions
- Prepare Raspberry Sauce: In a saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally until the raspberries break down and the mixture thickens slightly. Remove from heat and let cool. Strain the sauce to remove seeds for a smooth texture, if desired.
- Melt White Chocolate: Place chopped white chocolate in a heatproof bowl and microwave for about 60 seconds, stirring occasionally until fully melted. Allow the melted chocolate to cool slightly to prevent curdling when combined with cream.
- Whip Cream: In a separate chilled bowl, whip the heavy cream together with vanilla extract and optional sugar until stiff peaks form, ensuring a light and airy mousse base.
- Combine Chocolate and Cream: Gently fold the cooled melted white chocolate into the whipped cream, mixing carefully to maintain the mousse’s fluffy texture.
- Layer Parfaits: Spoon a layer of the raspberry sauce into the bottom of each serving glass to add tartness and color.
- Add Mousse Layer: Carefully spoon or pipe the white chocolate mousse over the raspberry sauce layer, filling the glasses evenly.
- Chill to Set: Refrigerate the parfaits for at least 30 minutes to allow the mousse to firm up and the flavors to meld together.
- Garnish and Serve: Just before serving, adorn each parfait with fresh raspberries and white chocolate shavings to add visual appeal and a final burst of flavor.
