  • 1/4 cup fresh flat leaf parsley

  • 1 teaspoon salt (more to taste)
  • 2 cloves garlic
  • Juice of half a lemon

Instructions

  1. Combine ingredients: Place roasted red peppers, plum tomatoes, raw almonds, fresh parsley, olive oil, salt, garlic, and lemon juice into a blender.
  2. Blend to desired texture: Pulse the ingredients together until the sauce reaches your preferred consistency; typically a texture between chunky and smooth is ideal with some almond pieces visible but mostly an even emulsion.
