- 12-ounce jar roasted red peppers, drained
- 4 small plum tomatoes
- 1 cup raw almonds

- 2 cloves garlic
- Juice of half a lemon
Instructions
- Combine ingredients: Place roasted red peppers, plum tomatoes, raw almonds, fresh parsley, olive oil, salt, garlic, and lemon juice into a blender.
- Blend to desired texture: Pulse the ingredients together until the sauce reaches your preferred consistency; typically a texture between chunky and smooth is ideal with some almond pieces visible but mostly an even emulsion.
- Serve: Use the sauce hot or cold as a flavorful complement to grilled chicken, vegetables, crispy potatoes, eggs, or other dishes of choice.
Notes
- You can adjust the salt and lemon juice to taste after blending.
- For a smokier flavor, use smoked almonds or add smoked paprika.
- Store leftover sauce in an airtight container in the refrigerator for up to 3 days.
- Can be served as a dip or spread as well as a sauce.
- If you prefer a thinner sauce, add a tablespoon of water or extra olive oil while blending.
