These cake mix cookies are incredibly easy to make with just 3 simple ingredients. Soft, fluffy, and endlessly customizable, they’re perfect for quick baking sessions and fun with kids.

Ingredients

1 (15.25-ounce) box cake mix (any flavor)

1/2 scant cup vegetable oil or 7 tablespoons melted butter

2 large eggs

Optional: Chocolate chips, M&M’s, Rolo’s, nuts, sprinkles, etc.

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, mix together the cake mix, oil, and eggs until smooth. Refrigerate the dough for 15–20 minutes if time allows.
  3. Using a cookie scoop or spoon, place dough onto the prepared baking sheet. Add optional mix-ins if desired.
  4. Bake for 9 to 11 minutes, or until cookies are set but not browned.
  5. Allow cookies to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
  6. Store in an airtight container for up to 3 days or freeze for up to 3 months.
